squash the monday blues...this post is for yesterday...oct 4/10

Butternut-246x225

What is wrong with me and not wanted to get out of my cozy bed lately???  Perhaps the changing of the seasons.  Pre-hibernation mode.  Haha!  So dark and brrrrrr chilly to the bone out there today.  I may have to just whip out the ol' Canada Goose soon ;)  Recently, my sched has been switched around a little and I have been enjoying working out in the evenings, rather than my usual 6 am stint.  I dearly miss so many of my 6 am pals, but I have to say I am lovin' the training time change more than I ever thought I would.  A major bonus to this is that I actually do feel WAY more awake and alert in the afternoons. On the other hand, this does mean less time for dinner prep and cooking in the evenings.

To help with this change, I have been making "big batch meals" in a one shot go and then have been savouring them for dins as yummy leftovers during the days and nights that follow.  This has been working extremely well.  Just this past week I made another version of my previous "trifecta of meat chili" (second time around was even tastier) and a beef stew.  Amen to wicked comfort foods that are actually real and good for you!!!

Tonight, as some of the regular 5:30 cf'ers and I freestyled our buttocks with lacrosse balls and rolled our tight bits in our usual circle after the wod.  When doing so, the topic of  "what's for dins?" came up.  Jenny was enjoying her yummy pecan Larabar and Andrew was happy with his 18th egg of the day haha, to help tied them over until they were able to go home and chef something fab up.  Warren expressed that he was hoping he would arrive at his place, to be greeted with his very own personal chef.  Stew looked like he was crossing his fingers and hoping for a sweet homemade meal to be waiting for him upon his arrival back home.  Hmmmm, I thought...it was already almost 7 pm by the time we finished our mobility stuff!  I originally planned on making another batch of Paleo chili, but then remembered that I had butternut squash in the fridge that I needed to use up.

So with that...a make-shift "breakfast for dinner-ish" meal was born...with a warm side of roasted butternut squash to boot.  I basically just cooked up some scrambled eggs with onion and spinach in them, along with a side of rowe farms sausage...and another side, which was the squash.  All of these flavours together were simply scrumptious.  So easy, you can't not make it!  Not even kidding...I did not speak a word until it was all done.  After that I fully wanted to lick the plate clean!  I resisted.

Here it is...

Easy Oven Roasted Butternut Squash

Ingredients

  • 1 butternut squash (halved...I bought mine from the market already cut into 2)
  • coconut oil to cover
  • dash of cinnamon (optional)
  • sea salt and fresh ground pepper to taste

Prep

  • cut butternut squash into 2 equal halves
  • take a baking sheet or casserole dish and grease with thin layer coconut oil (I used a silicone brush here)
  • then coat each exposed side of the squash with more coconut oil
  • turn over and place face down on baking sheet, so that they skin side is facing up
  • preheat oven to 325 degrees and when ready cook for approximately 60 minutes (this may vary)
  • you may have to test to see if it is done  by "sticking a fork it it!"
  • let stand for 10-15 minutes before serving
  • sprinkle with some cinnamon, fresh ground pepper and sea salt to taste
  • you can enjoy this as a side by either scooping all the contents out and eating it right out of the skin.
  • enjoy!

OH ya...by the way, if you haven't yet checked out Kelly Starrett's MobilityWod Blog do it now HERE!!!  kstar is the man!

scrumptious sundays

Bun

well i have to admit something...i slept in this morning like a crazy bas a$$ trooper until...get ready for it...until almost 1 pm!!!!!!  we were out kinda sorta late lastnight downtown, but took it fairly easy.  the fact of the matter was that our place was brrrrrrrr super chilly this am and underneath the comfy duvet...extreme cozy-ness was at it's highest.  i just couldn't peel myself out...and was having the best dreams ever, one after another.  i felt so good after waking up.  totally refreshed and recharged!  my body must have needed it!

this afternoon was supposed to entail my debut in trail running.  i was totally stoked to try this for the first time with some fellow cf friends.  was actually in the middle of getting ready and then sadly realized that i had left my only pair of "running shoes" at the gym!  =(  booooo to that!  all i had here, at out place, were my chucks...well my 6 pairs haha, but they def weren't going to cut it!  i had to take a pass at the last minute, but will hopefully be able to give it a go in the near future.  sounds like so much FUN!

later on this evening, we decided to go to one of our fav locale restaurants, which is the roy house, in leslieville.  it was packed!  i was totally craving meat...so i ordered the roy burger w sauteed mushrooms, onions and bacon.  simply scrumptioussssssssss!!!!!!!!  it is an amazing beef patty made from rowe farms meat, topped with tons of healthy goodness.  i ordered it with the bun, but basically just used it as a handle and peeled it away, as i chowed down the middle ! haha...see pic

if you haven't yet been there to try out their burger, i strongly recommend that you do...trust me, you won't be disappointed!  if you are feeling extra carnivore-ish, you can even order the double patty burg, like the duster wolfed down! ;)  would like to hear from any of you about your fav burg places to visit?  love checking out new locations...feel free to post comments of your go to joints in the city!

where did thursday go???

good evening my fellow real eaters!  tonight was "meet the creature, i mean teacher" night for me.  i was super busy today in the classroom getting ready and my eating was a little bit wonky.  still kept it pretty real, minus 5 chocolate covered almonds and variety store bought beef jerky.

the day started with...

breakfast:

medium coffee w cream from tim hortons (kinda i coffee snob now haha...it was awful, but was running late this am so couldn't get my usual.  only drank maybe half of it)

1 egg muffin

handful of raw almonds

lunch:

2 hard boiled eggs

another handful of raw almonds

4 celery slices (plain)

several chunks of chicken schwarma

small veggie salad

5 chocolate covered almonds

tall americano (black)

dinner: (worked right through dinner without really noticing the time, so ate this later than usual)

bubbly water w lemon

beef jerky (half the package)

avocado

several tomatoes and cucumbers sliced up

small handful of raw pecans

dose of fish oil

wod:

sadly no wod tonight...

but...

tomorrow's looks fun!  =D

Clean & jerk 5×1 reps
rest 5 minutes

Complete 3 rounds for time of:

  • 100 Double-unders
  • 30 Kettlebell swings (boys: 24kg; girls: 16kg)

oh ya! on the menu tomorrow will be...bacon, avocado and tomato lettuce wraps.  i saw a previous pic that i took of these and they made me totally want them again!  beauties! ;)

i will let you know how it goes! =D  peace out!!!

ps...i used to be a diet coke fan.  to help kick this habit i have substituted it for bubbly water with either lemon or lime.  i have realized that it was more the bubbles that i actually loved, rather than the taste of the pop!  give it a go! diet coke = bad news.  to paraphrase my friend mat lalonde...diet coke has absolutely no redeeming qualities, nothing good about it at all!

sleep well

wicked paleoFINDS = cuisipro herb keeper

well good evening...i thought i would share this wicked awesome product that i discovered with all of you.  i always have the best intentions, but sometimes i go crazy when grocery shopping because i want to buy all the produce possible...fill the basket, so it overflows...herbs included.  the problem with this, is that if these fine foods are not used within a few days, then they will start to criple and fade in that ever so packed produce drawer in the bottom of your fridge.  you all know what i am talking about right?
solution = the cuisipro herb keeper.  amazing.  check it out!

apres work today, i went to the gym and did the following workout:

Complete 8 rounds for time of:

  • 2 Handstand push-ups
  • 4 Pistols / side - needed band assistance here - determined to get these though!
  • 8 Kettlebell snatches / side (boys: 24kg; girls: 16kg) - used 35 # db

there was a 15 minute cut-off on this workout =(...got 6.5 rounds in.

then...when i got home, i decided to make another version of a recipe that is on my blog.  the only difference was that i added in different veggies and herbs than before.  i made up a delightful dozen of egg muffins.  great for on the go and easy to grab in the morning or throughout the day for a snack!!!  also, the beauty of these tiny mufs is that you can throw in whatever your little heart desires....yum yum!

arghhhhh...still need to eat more....i think!?! really listening to my body, but i feel totally full and satisfied all the time.  will continue to work on this.

breakfast:

2 hardboiled eggs
1 avocado
water

snack:

handful of raw almonds

lunch:

tall americano (black)
bowl of leftover beef chili from lastnight =)

snack:

3 mini cucumbers
4 pieces of celery w macademia butter

dinner:

another bowl of beef chili!!! haha
2 egg muffins
handful or raw cashews
sparkling water w lemon

week 2 - let's do it!

after a wonderful weekend...i was a total sleepy head when getting out of the rack this fine monday morning.  our bed is sooooo cozy and for some reason it was even cozier this morning.  i had a weird sleep lastnight...couldn't fall asleep and then tossing and turning like crazy.  i think i pressed the snooze button 19 times this am hahaha.  anyhoo...for some reason today i felt a bit like a robot going through the motions of daily life...so not like me...i def think it boils down to the sleep...i LOVEEEEEE my sleep and really notice when i don't get enough of it.  tonight will be better! =D

k so...came tonight after work and decided to make a huge massive bad boy batch of chili.  include below are a few pics to demonstrate the process.  let me tell you...i made this chili once before with 3 different types of meat.  it was good, but a tad overkill, so tonight i choose to just use lots of ground beef from Rowe Farms, and TONS of veggies.  it was fab and can't wait to have it in my lunch tomorrow...will prob be even more flavourful!  large amounts of leftovers for the rest of the week too...yeahhhhhh!

here is everything that was consumed today!

breakfast:

2 hardboiled eggs
1 L water

snack:

handful of cashews
handful shredded coconut

lunch:

tall americano (black)
cucumber, tomato and avocado salad topped with raw cashews

snack:

3 celery slices w macademia butter

dinner:

big bowl of paleo chili (ground beef, carrots, mushrooms, onion, garlic, zucs, celery, red pepper, jalapenos)
glass of red wine

off to do a wod now...shower and sleep!  until tomorrow...

well hello hello...day 7 comes to an end.  what a gorgeous weekend.  i spent a lot of time outside.  walking.  shopping.  tennis.  americanos on patios.  talking to strangers...haha...anyways fall is def in the air.  to end off the weekend we had a family dins over at my in-laws.  always good times over there and never a dull moment.  my mother-in law totally outdid herself and cheffed up an unreal paleo feast.  her cooking is always honestly so incredible!  EVERYTHING tonight was as usual...soooooo delish!  thank you so much joanie xox.  i will post some actual recipes on my blog early this week.  feel free to try some of the ones that i have created that are already there as well.  you can find them at  www.paleodish.com.  =D
